Watermelon Lime Granita
This refreshing "watermelon ice" can be served as a dessert, as a refreshing snack, or as a delicious fruit addition to dinner. It tastes like the essence of summer.
Total Time: 10 minutes, plus several hours freezing.

Ingredients:

1 personal sized watermelon (about 2- 2 1/2 pounds), cubed with rind removed.

2 limes, juiced

1/3 - 1/2 cup sugar to taste (depending on the sweetness of your watermelon)
Put watermelon, lime juice and sugar in a blender or food processor and blend until smooth. Pour into a 13 X 9 inch glass pan and place in the freezer. After 1 hour, stir the mixture and place back in the freezer. When the mixture is solid--after several hours--scrape mixture with a fork. As you scrape the top, the mixture will start to form into a shaved ice. Continue scraping until all of the mixture becomes the shaved ice. Scoop into serving dishes and garnish with lime slice if desired. Store in freezer if not serving immediately.
