Tomato Basil Bruschetta

This Bruschetta makes a great appetizer.  It also fits in well at a Bruschetta bar or as an accompaniment to an Italian dinner.

Ingredients: 

Directions:

Baguette or Italian Loaf

​

2 pounds roma tomatoes, chopped

​

4 cloves of garlic, minced

​

1/4 cup olive oil

​

1 T. balsamic vinegar

​

1 teaspoon kosher salt

​

Fresh ground pepper

​

1/4 cup - 1/2 cup fresh basil, minced

​

1/3 cup shredded parmesan cheese

​

​

Heat olive oil over medium low heat and add garlic.  Cook for 1 minute, until garlic is fragrant.  Remove from heat and let cool slightly.  Add tomatoes, vinegar, salt and pepper and basil.  Stir.  Let sit in the refrigerator for at least 1 hour.  Add parmesan right before serving.

Toasted Crostini Bread Pieces:

   

Preheat oven to 375 degrees.  Slice baguette in 1/4 inch slices.  Brush olive oil on each baguette slice to cover both cut sides.  Lightly salt baguette slices.  Toast in oven for 8-10 minutes or until lightly toasted. 

​

Top toasted bread slices with bruschetta topping.
