Teriyaki Chicken
Teriyaki chicken is a Hawaiian classic. This dish is great for parties as it is marinated overnight and then grilled right before serving.
Servings: 8-10
Total Time: 20 minutes, not including marinating time.
Ingredients:

3 pounds boneless, skinless chicken thighs

1 cup pineapple juice
​
1 cup soy sauce
​
1 cup brown sugar
​
1 inch piece of fresh ginger, peeled and thinly sliced
​
5 cloves of garlic, minced
​
4 green onions, sliced thinly
Place pineapple juice, soy sauce, sugar, ginger, garlic and onions in a bowl. Stir to combine. Reserve 1/4-1/2 cups of the liquid in a different bowl in the refrigerator. Place thighs in a gallon sized baggie and pour marinade on top. Marinade overnight in the refrierator.

Heat grill to medium heat. Cook thighs for 5 minutes on each side or until cooked through. Place chicken on platter and heat and then pour reserved marinade (that was NOT with the raw chicken) over top. Let rest for several minutes before serving.
