Tender Roasted Asparagus
Roasting asparagus is the key to bringing out the tender, flavorful vegetable. It also helps the asparagus to maintain its bright green color.
Servings: 12
Total Time: 40 minutes, not including cooling time.
Ingredients:
1 bunch asparagus

olive oil
​
kosher salt
​
fresh ground pepper
Directions:
Heat oven to 400 degrees F. Cover a baking sheet with aluminum foil. Wash and dry asparagus. Hold each asparagus and with one hand pinch the bottom of the asparagus and snap it down. The lower, hard part of the asparagus will break off. Discard the lower part of the asparagus and place washed and dried asparagus on baking sheet. Drizzle with oil and sprinkle with kosher salt and pepper. Toss to coat all asparagus.
Place baking sheet in oven and roast for about 15 minutes until crisp-tender. Serve warm.
