Sage Butter Turkey
Savory sage combined with butter is tucked just under the skin of this flavorful and moist turkey.
Total Time: 3 hours
Ingredients:
1 turkey (any size, though we use an 18 lb. turkey. Adjust amounts of ingredients down if using a smaller bird).

1 bunch of fresh sage

1-2 sticks (1/2-1 cup) butter

2-3 stalks of celery, sliced

1 onion, sliced into rings

kosher salt and pepper

olive oil
Directions:
Wash turkey thoroughly on the inside and out. Remove neck and giblets. Pat dry with paper towels.
If using an oven bag to cook the turkey, add a couple of tablespoons of flour, celery and several of the sliced of onion to the bottom of the bag. Insert turkey into the bag. Rub butter, salt and pepper on the inside of the turkey. Place remaining onion slices inside of the turkey, along with some sage. Gently separate the skin from the breast of the turkey and rub turkey breasts with salt and pepper. Add softened butter under the skin along with several sage leaves. Salt and pepper the skin of the turkey. Rub skin with olive oil to brown. Close turkey bag and cut several slits in the top of the bag.

Place turkey in a preheated oven at 350 degrees F. Cook according to the directions on the box of the oven bag, about 2 1/1-3 hours or until a thermometer inserted into the turkey reaches 170 degrees. Allow to sit for 20 minutes before slicing.
