Ingredients:

2 fillet mignon steaks

olive oil

kosher salt

pepper

1T. butter

Directions:

Remove steaks from refrigerator and let rest for 40 minutes before cooking.  Preheat oven to 450 degrees F.  Heat cast iron (or other oven-safe pan) over medium-medium high heat.

When steaks have rested, generously coat every side with kosher salt and pepper.  Place in cast iron pan and cook for 2 minutes.  Turn steak over and cook for 2 more minutes.  If desired, add 1 T. of butter and spoon several times over steak.  Place pan in the oven and bake for 7 minutes (1 minute less for a less cooked steak.)

Remove steak from oven and pan.  Put a pat of butter on top and let rest 10 minutes.
