Mild Con Queso
This homemade queso is not the typical bean and cheese or tomato based cheese dip. This creamy queso has a mild green chili kick that can be taken to any level of spice preference.

1 medium onion, chopped
2 to 3 garlic cloves, minced
2 T. Butter
1 can (4 oz.) chopped mild green chilies
2 ½ cups (10 oz) shredded cheddar cheese
2 cups (8 oz.) shredded Monterey Jack Cheese
1 cup milk
Tortilla chips and/or Pita chips
In a saucepan, sauté onion in butter until tender. Add garlic cloves and cook for about 30 seconds longer. Add chilies for an additional minute. Reduce heat to low and add milk slowly. Gradually, add small amounts of cheeses until melted. Maintain warmth by keeping the Queso in a slow cooker. Serve warm with tortilla chips and/or pita chips. This Queso tastes similar to a spinach and artichoke dip.
Some like it hot: Add 1 small jalapeno pepper (chopped and with seeds removed), plus ¼ tsp. cayenne pepper and ¼ tsp paprika to the chopped onions. Substitute the can of mild green chilies with a 4 oz can of hot green chilies.
