Loaded Baked Potato Salad
This twist on traditional potato salad tastes exactly like a baked potato, complimenting many grilled dishes. Because it is made the day before, it makes the day of your party easier--especially if you are occupied with food on the grill.
Ingredients:

1 5 pound bag red potatoes, cleaned

2 16oz. containers sour cream
​
1 cup mayonnaise
​
1 bunch green onions, chopped, including green tops
​
3/4 - 1 pound sharp cheddar cheese, shredded
​
1 T. kosher salt
​
Fresh ground pepper
​
10 slices of cooked bacon, broken into pieces
​
Kosher salt and olive oil for baking potatoes
​
Chopped fresh chives for garnish, if desired.

Brush potatoes with olive oil and sprinkle with kosher salt. Pierce potatoes several times with a fork and place on a microwavable plate (cook potatoes in batches). Cook potatoes on high for 7 minutes. Turn potatoes over with tongs. Place back in microwave and cook for an additional 7 minutes, or until potatoes are fork-tender. Allow potatoes to cool slightly.
Mix together sour cream, mayo, green onions, 1 T. salt and pepper in a bowl with a spoon. Chop potatoes into about a 1 inch dice. Add to sour cream mixture and stir until potatoes are coated. Chill (overnight if possible).
Before serving, stir in cheese and bacon. Add chives for garnish before serving if desired.
