Garlic Hasselback Potatoes

This fancy version of a baked potato looks impressive. You can add shredded cheese and bacon to make a loaded baked potato.
Servings: 4
Total Time: 1 hour 20 minutes
Ingredients:
Directions:
4 medium potatoes, washed
​
1 stick of butter, softened
​
3 cloves of garlic, minced
​
1 t. kosher salt
​
1/2 t. fresh cracked pepper
​
sour cream and chives, if desired
Heat oven to 400 degrees F.
​
Mix butter and garlic together. form into a log shape and place in the freezer.
​
Cut potatoes in 1/4 inch slices, being careful not to cut all the way down so that the potato does not fall apart. An electric knife makes cutting the potato easy.
​
Remove butter from freezer and slice the butter into slices. Tuck the butter slices between the cuts on the potatoes. Bake the potatoes for 1 hour.
​
Top with sour cream and chives.
