Creamy Lemon Bars
The filling on these bars is creamy and sweet, but the lemon flavor shines through.
Servings: 12
Total Time: 60 minutes
Ingredients:
2 cups flour

2/3 cup powdered sugar
​
1 cup (2 sticks butter) cut into 1 inch slices
​
4 eggs
​
2 cups sugar
​
zest of 1 lemon
​
1/2 cup (about 2 lemons), juiced
​
3/4 t. baking powder
​
1/4 cup flour
​
powdered sugar for dusting bars
Directions:
Preheat oven to 350 degrees F. Line 13 X 9 inch pan with aluminum foil. Spray with non-stick cooking spray.
Place 2 cups flour and powdered sugar in food processor. Process with a blade until combined. Add butter and process again until mixed. Mixture will be crumbly. Press into the bottom and up sides of 13 X 9 inch pan. Bake for 20 minutes or until it is starting to brown.

In a mixing bowl, beat eggs and sugar until light yellow and fluffy. Add zest and lemon juice. Mix in flower and baking powder until just combined. Pour into crust and bake for 25-28 minutes until set. Cool. Dust bars with powdered sugar before serving.
