English Toffee
Crunchy toffee topped with chocolate and nuts are a staple during the holidays. If butter and sugar separate while cooking, remove pan from heat and stir vigorously until it combines together again.
Servings: 6
Total Time: 20 minutes, not including cooling time.
Ingredients:
1 cup (2 sticks) butter
1 cup sugar
1/4 cup water
1 cup chocolate chips
chopped nuts or fleur de sel for the top of toffee
Directions:
Add butter, sugar, water, and salt in a heavy saucepan. Cook over medium heat, stirring with a wooden spoon until the mixture turns the color of a brown paper bag or reaches 300 degree F on a candy thermometer.

Pour into a buttered or parchment covered baking sheet. Immediately sprinkle chocolate chips over toffee. Allow to sit for several minutes. Spread chocolate over toffee once chocolate has softened. If desired, sprinkle nuts or fleur de sel on top.

Cool until hard and break or cut into pieces.
