Pistachio Salad with Sweet Balsamic Dressing
This salad is best at the peak of summer with its lush cherries and ripe blueberries. It makes a lovely 4th of July salad when you add the cheese.
Ingredients
Salad:
6 oz. mixed baby greens
1 pint blueberries
1 cup cherries, halved and pits removed
4 oz. white cheese, crumbled. (We recommend Unexpected Cheddar from Trader Joes, but goat cheese, aged cheddar or other cheese can be substituted)
1/2 cup roasted and salted pistachios
Dressing:
1/4 cup good balsamic vinegar
3/4 cup good olive oil
2 T. honey
1 clove garlic, minced
1/2 t. fine sea salt
crushed black pepper

Directions:
To make dressing, pour vinegar, oil, honey, salt, pepper and garlic into a small bowl or a dressing container. Mix.
Place washed mix greens into salad bowl. Add pitted cherries, blueberries, pistachios, and cheese. Toss with dressing just before serving.
