Perfectly Cheesy Fondue

Fondue is a dish that gathers guests and encourages conversation and laughter.  This incredibly cheesy Swiss fondue goes with just about anything you dip in it.  Prepare the fondue on the stovetop and then serve immediately or transfer to a fondue pot to keep warm.

Shredded Cheese

Ingredients: 

Directions:

4 cups chicken broth

2 T. garlic, minced

1/2 lemon, juiced

1 t. dry mustard

5 cups Emmental or other Swiss cheese, shredded

5 cups Gruyere cheese, shredded

4 T. cornstarch

1 t. nutmeg

Ground black pepper, to taste

Add broth, garlic, lemon, and dry mustard to a dutch oven or other heavy saucepan.  Cook, over medium heat, just until mixture begins to boil.  Reduce heat to medium low.

Toss shredded cheeses with cornstarch.  Add cheese to broth mixture in saucepan, one cup at a time.  Stir constantly after each addition until the cheese is melted and incorporated before adding more cheese.  After all of the cheese has been melted, add nutmeg and pepper.

Cubed french or sourdough bread, mushrooms, bell peppers, chicken or beef, and steamed (until tender) potatoes, broccoli, yellow squash, zucchini, cauliflower
