Stuffed French Toast

French toast is elevated (literally) when it is stuffed with a sweetened cream cheese mixture and fresh berries. This decadent breakfast favorite is sure to impress.  If berries are not in season and lacking some flavor, macerate your berries to sweeten them. Simply place washed berries in a bowl and toss with a couple of tablespoons of sugar or sugar substitute and let it sit for 30 minutes.

Berry & Cream Stuffed French Toast

Ingredients:

Directions:

French toast:

1 loaf of French bread

6 eggs

1 t. sugar

1 t. cinnamon

½ cup milk

1 t. vanilla

 

 

Cream Mixture:

8 oz. cream cheese, room temperature

¼ cup sugar

¼ cup whipping cream

2 T. sour cream

½ t. vanilla

 

 

Yogurt Glaze:

While this glaze isn’t necessary for the berry and cream stuffed French toast, it is a detail that will not go unnoticed.

 

1 6 oz. Greek yogurt (use your favorite flavor, recommended: vanilla or toasted coconut vanilla)

1 cup powdered sugar

½ t. vanilla

16 oz. strawberries, hulled and sliced

12 oz. blueberries

Make cream mixture first.  Blend together cream cheese, sugar, whipping cream, sour cream and vanilla.  Set aside. Prepare berries. Prepare glaze recipe by whisking ingredients in a bowl.

To make French toast, heat griddle to 350-375 degrees (use a non-stick pan over medium heat if you do not have a griddle).  Slice the French bread in ½ inch thick slices. Whisk together next 5 ingredients and pour into a pie plate. Dip French bread slices into mixture on pie plate and place on griddle. Cook until both sides are golden brown.

When ready to serve, place one slice of bread on serving plate.  Spread some of the cream cheese mixture on top. Place berries on top of cream mixture and place another slice of bread on top.  Repeat process with remaining bread. Top the stuffed French toast with additional berries and drizzle glaze on top.
