Ingredients
2 heads of romaine lettuce, washed and cut into pieces

1 can sweet corn
​
1 can of black beans, drained and rinsed
​
2 large tomatoes, diced
​
1-2 avocados, cubed
​
2 cooked chicken breasts
​
2 cups grated cheddar cheese
​
1 jar of ranch dressing
​
1 jar of BBQ Sauce
​
For onion rings:
1 onion, sliced and separated into rings
​
1/2 cup flour
​
1 t. season salt
​
1/2 cup milk or buttermilk
​
1 egg, lightly beaten
​
1/2 t. baking powder
​
Directions:
For onion rings: mix flour, salt, buttermilk, baking powder and egg together in a bowl. Dip onion rings into batter and fry in at least 1 inch of oil heated to 375 degrees until golden brown. Remove to a plate lined with a paper towel.

For Salad:
Place romaine lettuce on a large platter. Place remaining salad ingredients in a decorative pattern on top of the lettuce or mix together. Drizzle with ranch dressing and BBQ sauce. Top with onion rings.
